This coffee comes from the Chelchele washing station in Gedeb, a micro-region within Yirgacheffe, Ethiopia. Yirgacheffe, often referred to as the "Land of Many Springs", is known for its high elevation, abundant water sources, and long-standing coffee traditions. The area is also widely considered the birthplace of coffee.
Chelchele works with several hundred small-scale farmers from the surrounding area, each cultivating plots of around one to two hectares. Coffee here is deeply woven into daily life, not only as a source of income, but as a shared tradition passed down through generations.
Cherries are hand-picked with care, selecting only ripe fruit. Processing is done in a traditional natural style. After harvesting, the cherries are dried on raised beds for 15 to 20 days, depending on weather conditions. During drying, they are turned regularly to ensure even airflow and consistent results.
The high altitude of the region, around 2,000 meters, allows for slower drying and contributes to clarity and structure in the cup.
This coffee is sweet and aromatic, with soft stone fruit tones and a rounded acidity. The profile is clean and expressive, showing the clarity and balance typical of high-altitude Ethiopian coffees, with a finish that reminds us of dried fruits like figs.
