This coffee comes from Cooperativa La Prosperidad de Chirinos in San Ignacio, Peru. Founded in 1968, the cooperative brings together 817 producers who cultivate coffee at elevations between 1,200 and 1,900 meters above sea level.
Farms are typically small, averaging 1 to 5 hectares. The mountainous terrain, combined with steady rainfall and altitude, creates stable conditions for growing quality-focused coffees.
Over a quarter of the cooperative’s members are women, which is a rare sight in the coffee industry. The cooperation also supports education and long-term opportunities within the communities.
Members receive agronomic training, financial support and access to demonstration plots where best practices in fertilization, pest management and harvesting are shared. Many farmers also diversify their income through projects such as beekeeping or avocado cultivation.
This lot is fully washed and Organic certified. Farmers typically process coffee on their own farms. Cherries are pulped, fermented and dried in the sun, either on raised beds, patios or drying structures.
This coffee is round and well balanced, with a dense structure. Notes of dark chocolate form the base, supported by orange-like brightness and a soft pecan nuttiness. The sweetness is medium and the acidity low.
