This coffee comes from Frinsa Estate in West Java, Indonesia. The farm is run by Wildan Mustofa and his wife, Atieq, who started their work in this region in 2010. Their estate sits around 1400 meters and gives them full control from harvest to drying, sorting, and storage. Frinsa works with their own plots and with trusted outgrowers, bringing together cherries from across the Sunda highlands.
We visited the estate in May 2025 and were welcomed like family. The care and warmth of Wildan, his son Fikri, and their team made a deep impression on us, and this coffee holds a special place for that reason.
This lot is an extended fermentation natural. The cherries are washed and floaters are removed, then fermented under water for four days without additives. After fermentation, they dry whole on clean tarpaulin in the open yard. This slower method builds sweetness and keeps the cup round and clean.
Expect fruits and warm spices. The overall impression is sweet reminding us of cherries and dried fruits like prunes. From start to finish the flavour profile is deep and the structure big.
