Producer and Region
This coffee comes from Tabe Burka, a washing station in Uraga. This coffee is grown in an area with deep-rooted coffee traditions, where the fertile highland soils sustain a polyculture farming system. Local smallholders intercrop coffee with food crops, preserving biodiversity while nurturing some of Ethiopia’s most exceptional coffees. Grown at 1,850–2,000 meters, this lot reflects the harmony of ancient practices and high-altitude terroir.
Cultivation and Processing
This lot is composed of Ethiopian heirloom varieties, hand-harvested from small farms within 10–20 km of the Tabe Burka station. After delivery, cherries are carefully sorted, pulped, and washed using fresh mountain water. The coffees are then placed on raised beds to dry slowly under the sun, with regular turning and careful monitoring.
The washed process highlights the clarity and brightness typical of the Guji profile, refined through high-altitude growing and precise processing.
Flavour
A classic highland Ethiopian, refined and clean with soft floral aromas, vibrant citrus freshness, and notes of stone fruit like peach and nectarine. In the finish, a butterscotch sweetness unfolds.
This coffee is high-grown and washed, which means it's particularly dense. We therefore recommend grinding it slightly coarser for optimal results.
