This coffee comes from the Chelbesa area in Yirgacheffe, Ethiopia, where small growers deliver their red cherries to the SNAP washing station. The station sits at over 2,000 meters, in a forest landscape with shade trees and food crops like banana. The cooler climate and higher altitude help shape its clear and lively character.
Cherries are hand-picked and rested in the shade for 45 to 60 hours for a slow fermentation. After washing, the parchment dries on raised beds in thin layers for 7 to 10 days. The beds open early in the morning, close during the strongest sun, and then open again until late afternoon. This steady pace keeps the cup clean and sweet.
Expect stone fruits like peach, light florals like white tea, and a sweet touch similar to nougat. The intensity stays soft, refined, and balanced.
