Here we have an absolute fruit bomb from Ethiopia!
It comes from the Sidamo region and is produced by Mr Dukale. He works with several small farmers who are all situated on the slopes of the Faficho river. Mr Dukale is focussing on high-end micro-lots and only works with the best cherries.
The coffee is processed with care at one of his own washing stations near Bombe village.
Anaerobic fermentation
The whole cherries start with anaerobic fermentation and then undergo a dry fermentation process by drying them in the sun. The cherries are then moved frequently and will be covered during the hottest hours of the day to protect the cherries from intense sunlight, then again at night to protect against humidity. The selection of cherries, the outstanding growing conditions and the careful processing leads to an amazingly sweet, funky and intense cup of coffee.

In our roast we unlock the intense sweetness and funkyness of the coffee. At the same time it remains delicate and juicy.
