This coffee comes from the ASCISP cooperative in Planadas, Tolima, Colombia, where 79 farmers across seven villages cultivate coffee at altitudes ranging from 1,700 to 2,000 meters. The region, often referred to as the “cloud factory” due to its high humidity and volcanic soils, offers ideal conditions for coffee cultivation. However, these same humid conditions make drying coffee challenging, which can impact both quality and farmers’ income.
To address these challenges, the Fabrica Project was launched. Two mechanical drying installations - one for each cooperative - have been installed, each capable of processing up to 4,000 kg per batch. These dryers not only improve the drying process but also help farmers achieve consistent quality and meet stricter moisture standards.
Farmers in this cooperative grow coffee alongside crops such as beans and corn, supporting both biodiversity and local food supply. Coffee cherries are hand-picked every 20 days to ensure only the ripest cherries are selected. The coffee is traditionally fermented, washed twice, and then dried in the new mechanical dryers until the ideal moisture level is reached to preserve quality. This lot was transported to Europe via By Sail, an initiative that uses sailing ships to reduce the environmental impact of coffee logistics.
A well-balanced coffee with a rounded body, bright acidity, and a subtle spiciness, complemented by a gentle sweetness reminiscent of hazelnut and blackcurrant.
