A good grinder is not an accessory. It is the most important piece of equipment in your coffee setup.

Grind size determines how water flows through the coffee bed — and therefore what ends up in your cup. A thousand-euro espresso machine underperforms with a poor grinder. The reverse is also true: a good grinder gets more out of basic equipment than you would expect.
