This coffee comes from the Chiapas region in southern Mexico, where it is grown at altitudes around 1,000 meters. The coffee is cultivated on small family farms, often under the shade of native trees that protect the coffee plants and support local biodiversity. The region’s diverse landscape ranges from tropical forests to mountain valleys. Chiapas is one of Mexico’s most important coffee-producing areas, responsible for about 40% of the country’s total production and home to many indigenous farming communities who maintain traditional cultivation practices.
After careful hand-picking, the cherries are washed and dried on patios. The coffee is then decaffeinated using Descamex’s water-based process, which involves steaming the beans, filtering the caffeine out through water, and preserving the coffee’s original aromatic compounds. This method is free from solvents and carefully managed to retain the coffee’s natural sweetness and body.
Decaffeinated yet delivering a rich experience, this coffee offers a thick, rounded cup with deep chocolate sweetness, hazelnut undertones, and a subtle hint of red apple. Its smooth, low-acidity profile makes it a perfect choice for any time of day.
