This Holiday Coffee combines two lots. One is an Ombligon variety from Nestor Lasso at El Diviso, Huila, Colombia, grown on the slopes of the family farm. The other is Cascavel from small and medium farms across Brazil, including Sul de Minas, Cerrado Mineiro, Mogiana, and Matas de Minas. Together, they bring funk, spicy tones, sweetness, and warmth to the cup.
The Colombian Ombligon is hand-picked, fermented in oxygen-free bags with Luwak yeast, then dried slowly in a dehumidifier to preserve delicate fruit and floral notes.
The Brazilian Cascavel is harvested mechanically and by hand. Some mucilage remains during drying, adding sweetness, chocolate, and nutty notes while keeping the cup round and full-bodied.
Complex, fruitful and lively from the Ombligon with red fruit and botanical hints, rounded by the Brazilian coffee’s chocolate, nutty, and sweet tones. The result is a warm and spicy cup.
