This coffee comes from Alejo Castro Kahle of Volcan Azul, a family estate on the slopes of the Poas Volcano in Costa Rica’s Valle Central at 1,450 meters. The rich volcanic soil and cool climate shape a clean and balanced cup.
Alejo is part of the fifth generation of the Castro-Kahle family, who have grown coffee here for over a century. They care deeply for their land, conserving over 200 hectares of forest above their coffee fields and protecting another 1,500 hectares of primary forest in the Osa Peninsula.
This Caturra lot was hand-picked at full ripeness and processed as a natural coffee. The cherries were dried on raised beds, stirred daily, and covered at night to protect from moisture. This careful drying brings out a clear sweetness and bright fruit character.
This coffee has a gentle sweetness, with notes that recall soft fruit like melon and a silky texture similar to chocolate mousse. It remains lively, with a sweet citric acidity that reminds us of orange.
