This coffee was produced by Jhoan Vergara at Finca Las Flores in Huila, Colombia. Located at 1,750 meters above sea level, Finca Las Flores is a model of innovation. The farm is renowned for its experimental approach, which includes advanced agricultural practices and fermentation and drying techniques.
Jhoan Vergara, alongside his family, has cultivated a variety of coffee crops, including Java, Pink Bourbon, Maracaturra, Chiroso, Tabi, and Bourbon Sidra. This particular lot comes from a batch of Java, known for its distinctive, complex profile. The cherries undergo a unique fermentation process, where they are oxidised in cherry for 24 hours, followed by 60 hours of fermentation in the cherry, then washed with thermal shock using water at 55°C to wash off bacterial load. Afterward, the coffee is dried in dehumidifying machines for 50 hours, ensuring consistency and a precise flavour profile.
We found lychee, melon, and thyme, supported by a silky and velvety mouthfeel. The profile is a playful mix of herbal and tropical notes. Flavour-rich yet clean and transparent.
