Luis Marcelino started Aroma Nativo four years ago to connect unknown coffee producers with roasters from around the world. All the farmers he works with are from the Quindio department of Huila which is recognized as the specialty coffee paradise because of its unique microclimate and terroir.
In 2022 Luis took his project a step further by launching the Veci Project; a collaboration between coffee producers who have good agronomic practices but do not have good infrastructures, processing facilities and processing knowledge. Luis is a true specialist in processing and helped those producers to let their coffees shine at its full potential.
For this special lot Luis used the ripest cherries of this Pink Bourbon variety and passed them through an anaerobic fermentation stage. Then he pulped the fermented cherries and applied a second fermentation in barrels adding native bacteria and yeasts.
Expect an extremely tropical and sweet flavour profile which reminds us very much of Solero ice cream.
