The AeroPress has been around since 2005 and has barely changed since. That's not an oversight - the design simply works.
The principle is called zero-bypass brewing: all the water comes into contact with the coffee. Nothing can escape past the filter. Once the desired contact time is reached, you press the water through the coffee bed with the plunger. The result is an even extraction and a full body - with little bitterness.
What also makes the AeroPress interesting: there is no fixed way to use it. Grind size, water temperature, brew time, inverted brewing - every variable changes the result. Experiment with ratios for a clean filter coffee or a full, almost americano-like cup. Every year baristas compete at the Dutch AeroPress Championship with new recipes.
