This coffee comes from Norbil Pérez’s La Chirimoya farm in El Campo, Cajamarca, Peru, at 2,183 meters above sea level. Norbil is part of the Aromas del Valle Cooperative and contributes his microlot to their program. The cool, fertile, mountainous region encourages slow cherry development and a complex, expressive cup.
The cooperative supports smallholder farmers with training, traceability, and access to premiums, while promoting participation in national and international coffee programs.
Caturra cherries are hand-picked and processed using the “frutas Maduras” style, a variation of the washed method. Instead of removing the cherry immediately, the whole cherries undergo a dry fermentation period before the washing procedure starts. This enhances fruit sweetness and highlights jammy and floral notes. Drying and processing are carefully managed to preserve clarity and complexity.
Expect a layered, rich cup with bright red berries, jammy fruitiness with a creamy mouthfeel and a brown-sugary finish. It’s the perfect all day drinker while being very complex at the same time.
