This coffee comes from the Timbuyacu community in the Amazonas region of Peru. Grown at high elevations in a lush, remote landscape, the area offers ideal conditions for cultivating exceptional coffees. Cool temperatures, rich soils and consistent rainfall allow cherries to develop slowly, resulting in complex and refined flavour profiles.
Producers in Timbuyacu are smallholder farmers who rely on coffee as their main source of income. The remote location makes access to infrastructure and markets challenging, but it also preserves traditional farming practices. By focusing on quality and unique varieties like geisha, farmers are able to access better opportunities and improve long term stability.
Cherries are carefully hand-picked at peak ripeness and processed using the honey method. After pulping, part of the mucilage is left on the beans during drying, allowing sugars to interact with the coffee over time. This process enhances sweetness and body while maintaining clarity. Drying is done slowly and with care to ensure stability and preserve the delicate characteristics of the variety.
Expect an elegant and layered cup with floral notes, soft stone fruit and citrus, a gentle honey-like sweetness and a smooth, tea-like body.
