This exceptional coffee hails from Coffea Diversa, located in Jutiapa, Guatemala, at high altitudes of 1,500 to 2,000 meters. Managed by José Padilla and Gonzalo Hernandez, Coffea Diversa is home to the largest private collection of botanical coffee varieties in the world, with over 25 unique cultivars. Their commitment to preserving coffee biodiversity positions Coffea Diversa as a pioneer in the coffee industry.
The Laurina variety is a natural mutation of Arabica first discovered on Réunion Island in the 18th century. Known for its low caffeine content and refined cup profile, it flourishes under Coffea Diversa’s careful cultivation.
The coffee cherries are hand-picked at peak ripeness, then pulped to remove the skin while leaving a layer of sticky mucilage on the beans. This remaining mucilage is key to the honey process, contributing to the coffee’s characteristic sweetness. The beans are then dried slowly on raised beds for three weeks, allowing the sugars to infuse the cup with depth and clarity while ensuring consistent quality.
Surprisingly low in caffeine, this coffee still tastes just like the real deal. It’s lively and clean, with a bright orange peel acidity and a gentle sweetness that brings to mind pear and nougat —delicate and delicious from the first sip to the last.
