We are so excited to share our first washed Ethiopia of the season with you! This is a very delicious and outstanding coffee with a unique and delicate flavour profile. It comes from the rich forests on the high mountains of West Arsi which is located in the Oromia region, bordered by Sidama.
The washed processing begins with pulping the cherries and placing them into fermentation tanks where they are fermented in water for 48–60 hours. Then, the fermented coffee is washed, and the parchment coffee is dried on the station’s 200 raised beds for 7–10 days until reaching its ideal humidity.
This amazing complex and delicate coffee will offer you the true taste of Ethiopia. You can expect a very floral driven profile which gives us a very 'white' experience. White flowers, cloudy white tea, white peach and then finished with a fragrant citrus flavour like bergamot. We roast this coffee light enough to enhance the delicacy and sparkling acidity and developed enough to make that round and sweet espresso.
