This coffee comes from Gundira Shela, the farm of Ephrem Mulugeta in the Decha district of Kaffa, Ethiopia. It is special that the coffee comes from a single farm rather than a blend of many smallholders. The farm sits at around 1,850 metres above sea level, in one of the most historically important coffee regions in the world, often considered the birthplace of Arabica coffee.
Ephrem established the farm in 2001 and built it into a fully integrated operation, with its own drying stations, storage and direct export. Gundira Shela is surrounded by native forest and shade trees, so the coffee grows among native trees rather than on cleared land. That biodiversity, and the slow cherry development it brings, is what shapes the coffees of Kaffa.
This lot is made from the local Ethiopian varieties 74110 and 74112, processed as a natural. Only the ripest berries are handpicked, then dried slowly on raised beds for around 21 days.
What sets it apart is the drying in shade. Slowing the moisture loss lets the sugars in the fruit develop more gradually, which builds sweetness and complexity while keeping the clarity and structure of the cup.
The varieties 74110 and 74112 are classic Ethiopian selections, developed for their resilience and cup quality. They are known for floral aromatics, bright fruit and a layered sweetness.
Grown in the native forest of Kaffa, they tend to show a wilder, more untamed character, shaped by the region's biodiversity and altitude.
Expect a rich, layered cup with milk chocolate, apricot and strawberry. This is a Forest Coffee, grown among the native trees of Kaffa, and you taste it: a sweet, rounded body and a deep, forest-like character that stays long after the last sip.
