This coffee comes from Gerba Dogo in Guji, Ethiopia, and is produced by Shonora Coffee. The Shonora family has been working with coffee for more than 40 years, building their own dry and wet processing stations and working directly with more than 150 outgrower farmers in the Guji area.
The coffee is grown at 2,100 to 2,300 masl in nutrient-rich soils. The farms use organic compost, including fallen leaves from shade trees, and no chemical fertilizers are applied. This approach supports healthy soils and the natural environment around the coffee farms.

The coffee is selectively handpicked and processed as a washed coffee. After processing, the parchment is dried on raised drying beds, allowing the coffee to dry slowly and evenly.
The high altitude, careful selection, and washed processing help preserve the clarity and delicate character of the coffee.

This lot consists of traditional Ethiopian heirloom varieties. These local varieties are known for their elegant floral character, layered sweetness, and expressive fruit notes, particularly when grown at the high elevations of Guji.
Washed Ethiopian coffees often lean either citrusy and tea-like or sweet and peachy. This one brings a bit of both, with an extra layer of savory sweetness and butterscotch that makes it really special.
