This coffee comes from Chelbesa in Yirgacheffe, Ethiopia, a region often regarded as the birthplace of Arabica coffee. Yirgacheffe literally translates to "Land of Many Springs", a reference to the abundant natural water sources that, together with the high altitude and fertile landscape, create ideal conditions for producing exceptional coffees.
The coffee is grown by a network of smallholder farmers and processed by Negusse Dabela at the Kebele washing station. By combining cherries from carefully selected producers, good processing, the station consistently delivers some of the region's most elegant and expressive coffees.

Only the ripest cherries are handpicked before being delivered to the washing station. After depulping, the coffee ferments under water for 72 hours, allowing the remaining mucilage to break down slowly and evenly.
The parchment is then thoroughly washed and dried on one of the station's 200 raised beds for 7 to 10 days. This slow and carefully managed drying process preserves the coffee's floral aromatics, vibrant acidity, and remarkable clarity.

This lot consists of traditional Ethiopian heirloom varieties, celebrated for their floral aromatics, vibrant citrus character, and layered sweetness. Combined with Yirgacheffe's unique terroir, these local varieties produce coffees with remarkable elegance, complexity, and unmistakable Ethiopian character.
This coffee captures everything we love about a classic washed Ethiopian. Expect delicate white florals, juicy ripe stone fruit, and fragrant bergamot, supported by sparkling acidity, silky sweetness, and a clean, elegant finish.
