This coffee comes from the Alaka farm in Hambella, Guji, Ethiopia. Grown above 2,100 meters in a forested landscape with rich soils and cool temperatures, the conditions support slow cherry development and a clean, expressive cup.
Alaka is managed by Metad, working with a focus on traceability, sustainability and long term impact in the local community.
Cherries are hand-picked and processed using a washed method. After pulping, they ferment and are washed before drying on raised beds for around 10 to 15 days. Slow, even drying helps preserve clarity and structure in the cup.
Expect a delicate and clean profile with floral notes, bright citrus, soft stone fruit and a gentle sweetness, with a light and tea-like body.
