Finca Himalaya is a 24-hectare farm in Apaneca, in the Apaneca Ilamatepec region of El Salvador. The farm has been in the Salaverria family since the 1870s, when Mauricio’s great-great-grandfather first planted coffee here. Today, Mauricio Salaverria manages five farms and is known for his expressive, fruit-driven coffees and experimental approach to processing. His coffees have been part of our assortment for years, and we’re happy to welcome another lot from his farms.

This coffee is processed as a natural, meaning the coffee cherries are dried whole with the beans still inside. Finca Himalaya has clay and volcanic soils, while Mauricio’s approach to coffee production includes careful post-harvest processing and experimentation with different varieties and methods.

SL 28 is a variety originally selected in Kenya for its potential to produce high-quality coffee. It is known for its distinctive cup character and is now grown in other coffee-producing countries as well.
Mauricio’s coffees are known for their expressive tropical fruit character and pronounced sweetness. The natural process supports this fruit-forward profile, resulting in a sweet and vibrant cup.

Deliverytime
At Blommers we follow coffee from the source to the cup. We work directly with farmers who know what they are doing and roast in a way that keeps the original flavour intact.
Alles wat we verkopen, van malers tot brewers, hebben we zelf getest. In onze ontwikkelruimte werken we dagelijks met de apparatuur, zodat het advies dat we geven is gebaseerd op ervaring en niet op een specificatieblad.
