Product description

Producer and Region

This coffee comes from Aquiares Estate on the slopes of the Turrialba volcano in Costa Rica. The name means “land between rivers” in the Huetar language, and with around 1,800 people living on the estate it is one of the largest farms in the country, surrounded by forest, rivers and rich biodiversity.

The farm is run by Diego Robelo, who oversees its Rainforest Alliance and Carbon Neutral certifications and keeps pushing quality through experimental processing and rare varieties.

Cultivation and Processing

This lot is Centroamericano H1, a rare F1 hybrid from crossing Sarchimor T-5296 with the wild Sudan Rume. Its high mucilage content makes it a natural fit for anaerobic natural processing.

After harvest the cherries are floated, cleaned and sealed in stainless steel tanks fitted with a one-way valve. Over 24 hours the natural yeasts and microorganisms push out the oxygen and ferment the coffee, building sweetness, complexity and fruit character. The cherries then dry first on patios and later on raised beds in solar dryers, a slow and controlled process.

Variety

Centroamericano H1 pairs excellent cup quality with strong agronomic performance. Sudan Rume brings florals and vibrant fruit, while Sarchimor adds structure and sweetness.

The result is a distinctive variety with real clarity and depth in the cup.

Cup Profile

This is a coffee that keeps revealing new layers as it cools. Expect mandarin, fig and lychee, with the tropical fruit and gentle funk that mark this lot. A velvety body and layered sweetness carry it, and it keeps you reaching for the next sip.
