This coffee comes from La Villa farm in Acevedo, Huila, Colombia, managed by Eduard Gaviria. The 5 hectare farm sits at 1670 masl and is planted with around 19,000 coffee trees, alongside plantain as a companion crop.
Originally part of his family’s land, Eduar expanded his share to build La Villa into a focused specialty coffee farm. With ideal altitude, climate, and soil conditions, he has shifted fully toward quality-driven production.
This lot is a Papayo variety processed as an anaerobic natural. After selective picking, the cherries are fermented in a low-oxygen environment to intensify fruit expression and structure.
Drying is carried out carefully to preserve clarity and balance, resulting in a clean yet expressive profile with pronounced fermentation character.
Papayo is a lesser-known Colombian variety, named after the elongated shape of its cherries. It is valued for its distinct profile, often showing bright fruit, floral notes, and a soft, rounded structure.
Expect a sweet and funky cup with red fruits and soft tropical fruitiness. It's silky and smooth with a subtle winey character from the processing.
