Producer and Region
This coffee comes from El Rincon farm in Santa Maria, Huila, Colombia, where Diego Horta manages an 11-hectare farm at 1,600 to 1,700 masl. Diego grew up surrounded by coffee, learning the craft from his parents and gradually developing his own approach to quality and innovation.
Today, Diego experiments with different varieties and processing methods while also growing plantains, yucca, avocados, and bananas. His family remains closely involved in the farm, with a shared focus on quality, sustainability, and protecting the natural resources around them.
Cultivation and Processing
This lot consists of Pink Bourbon and is processed as a washed coffee. After harvest, the cherries undergo 12 hours of oxidation before being depulped and fermented in bags for 30 hours.
The coffee is then dried slowly in a drying shed for 15 days, allowing the moisture to reduce gradually and evenly. This careful processing helps preserve the delicate character, sweetness, and clarity of the coffee.
Variety Notes
Pink Bourbon is known for its elegant and expressive character, often showing floral aromatics, bright fruit, and refined sweetness. At the high altitude of Santa Maria, the variety can develop a particularly delicate and layered profile.
Cup Profile
Expect a delicate and sweet cup with sugar cane sweetness, a herbal undertone and ripe peach. The profile is clean and elegant, with sweet aromatics, gentle acidity, and a light, refined finish.
