This coffee is processed by Aroma Nativo in Colombia, at 1700 masl. The project was founded by Luis Marcelino to support producers who grow high quality coffee, but lack processing infrastructure.
Through this model, farmers receive premium prices for their cherries, which are then processed centrally with full traceability. Each lot is kept separate, allowing every farm and harvest moment to express its own character. The region's altitude and climate support slow cherry maturation, resulting in a refined and expressive cup.

Only the ripest striped bourbon cherries are selected for this lot. This rare bourbon mutation is known for its distinct appearance (light stripes on the cherry skin) and elegant flavour profile.
The cherries undergo an anaerobic fermentation before pulping, followed by a second fermentation in mucilage using native bacteria and selected yeast strains. This double fermentation builds depth, intensity, and aromatic complexity.
Drying takes place on raised beds over 15 days, followed by a 2 month stabilization phase in a controlled environment to lock in quality.

Expect a sweet and tropical coffee with surprising depth, equally delicious black or with milk.

Deliverytime
At Blommers we follow coffee from the source to the cup. We work directly with farmers who know what they are doing and roast in a way that keeps the original flavour intact.
Alles wat we verkopen, van malers tot brewers, hebben we zelf getest. In onze ontwikkelruimte werken we dagelijks met de apparatuur, zodat het advies dat we geven is gebaseerd op ervaring en niet op een specificatieblad.
