This coffee comes from the Sierra Mariscal region of Chiapas, Mexico, where more than 2,990 smallholder farmers are part of the FEDESI federation. Their farms average around 2.5 hectares and are located between 1,200 and 1,700 meters above sea level. FEDESI was founded in 2015 by six cooperatives with the aim of helping farmers access better markets and receive better prices for their coffee. Members also receive technical assistance, training in Good Agricultural Practices, and access to prefinancing.
The coffee is selectively handpicked by farming families, who float the cherries to remove underripe fruit before pulping and fermenting them for 10 to 16 hours. After fermentation, the parchment is washed and dried on cement patios for around 5 to 10 days.
The coffee is then decaffeinated using the Mountain Water Process. This method uses water rather than added chemical compounds to remove caffeine. A saturated green coffee extract is filtered to remove caffeine, allowing the coffee to retain as much of its original flavour as possible while maintaining its Organic certification.
A sweet and clean decaf with notes of citrus, milk chocolate, and caramel. The cup is rounded and balanced, with a gentle acidity and a soft sweetness that make this an easy coffee to enjoy throughout the day.
