Product description

Producer and Region

This coffee comes from Finca Irlanda, a farm in the Soconusco region of Chiapas, close to the Guatemalan border. It's the region where the story of Blommers began. In June 2009, Robert Blommers visited the farm through family ties in Mexico and was inspired by the biodynamic coffee grown there. That visit was a key reason for starting Blommers Coffee Roasters together with his brother Berend in 2013. Soil, biodiversity and nature have stayed central to how we think about coffee ever since.

Finca Irlanda was founded in 1928 by Rodolfo Peters, a German immigrant who had settled in Mexico after the First World War. His son Walter Peters continued the work: in 1967, the first certified shipment left for Germany, and Finca Irlanda became the first coffee farm in the world to receive Demeter certification. Walter's son Bernd Peters ran the farm next, and today Bernd's son Alex Peters runs it, the fourth generation of the Peters family. Alex is also a good friend of Robert and his wife, Jimena.

Through their own foundation, Peters IAP, the family supports medical and educational programmes for the people who live and work on and around the farm.

Cultivation and Processing

The coffee is grown according to biodynamic principles. Planting, pruning and harvesting are timed to the phases of the moon. The surrounding jungle is left as untouched as possible, so part of the coffee grows among the jungle's original trees.

Little goes to waste in processing. Coffee pulp and other organic waste are composted and returned to the soil as natural fertiliser. Californian red worms turn part of that waste into vermicompost, which also goes back into the soil.

Biodiversity plays its own role in how the coffee is grown. The ant species Azteca sericeasur keeps the coffee berry borer in check naturally, without pesticides.

This connects directly to Blommers' own history. Our interest in biodynamic coffee started here in Mexico, and soil, biodiversity and nature are still a starting point in how we work with coffee today.

Finca Irlanda

Flavour

Expect a sweet, balanced cup with a clear sense of origin. The profile is expressive yet elegant: a pronounced chocolate-like sweetness, soft notes of red apple, and a rounded body. A coffee with plenty of character, without losing the clarity we look for in a good cup.

Coffee the way it was meant to be

At Blommers we follow coffee from the source to the cup. We work directly with farmers who know what they are doing and roast in a way that keeps the original flavour intact.

Alles wat we verkopen, van malers tot brewers, hebben we zelf getest. In onze ontwikkelruimte werken we dagelijks met de apparatuur, zodat het advies dat we geven is gebaseerd op ervaring en niet op een specificatieblad.
