Behold the recipe for perfect coffee: handpicked ripe cherries, anaerobic fermentation, and slow sun-drying of coffee beans grown in one of the world’s best terroirs. Bombe is an absolute fruit bomb from the famous Sidamo region.
This coffee hails from the Sidamo region and is produced by Mr. Dukale. He collaborates with several small farmers who are all situated on the slopes of the Faficho river. Mr. Dukale specializes in high-end micro-lots and exclusively selects the finest cherries. The coffee is processed with care at one of his own washing stations near Bombe village.
The whole cherries undergo an anaerobic fermentation process and then a dry fermentation through sun-drying. To protect the cherries from intense sunlight, they are frequently moved and covered during the hottest hours of the day, and they are also covered at night for additional protection against humidity.
The careful selection of cherries, ideal growing conditions, and meticulous processing result in an astonishingly sweet, distinctive, and intense cup of coffee.
