Right in the middle of the outstanding mountains of the Apaneca Ilamatepec region, you’ll find the medium-sized Santa Julia farm, nestled on the slopes of the Santa Ana Volcano. The farm is managed by Jose Antonio, Andres, and Jose Salaverria. They primarily cultivate the Bourbon and HSF hybrid varieties (a hybrid of Pacas and Bourbon Elite).
The secret behind this high-quality coffee lies in the excellent coffee-growing conditions that the landscape provides, including the soil and climate, coupled with meticulous, selective hand-picking and innovative processing methods.
After harvesting, 80% of the mucilage is removed using a disc pulper. Typically, the coffee is then sun-dried on patios. However, for this coffee, it underwent a double water soaking process before drying, resulting in enhanced elegance and pronounced acidity.
Expect a classic Salvadoran flavour profile that is soft, balanced, and chocolaty, complemented by a bright, berry-like acidity. The espresso offers a superb, round mouthfeel and a long, complex finish.
