Los Pirineos is a well known family business with over 130 years of tradition in specialty coffee. The farm takes its name from the Pyrenees mountain range between France and Spain and is located on the slopes of the Tecapa volcano. Gilberto Baraona was the head of the family and is a true icon in the coffee industry. He won numerous awards in the world of specialty coffee (El Salvador coffee farmer of the year 2018, 17 cup of excellence awards). Today Diego and Fabiola, his children, have taken over the activities of their father who tragically died of Covid in June 2020.
Los Pirineos covers 80 hectares, coffee is grown on 60 hectares and 10 hectares of wild forest is preserved. They cultivate many varieties such as Red Bourbon, Yellow Bourbon, Tekisic, Pacas, Pacamara, Colombia, Catisic, Icatu, Laurina etc.
This coffee is a small lot from only two bags which is anaerobic natural processed. This means it is fermented in an environment without oxygen. This results in a rich and sweet coffee with a good amount of funk without sacrificing clarity. It’s a harmonious cup with fruity notes such as cherry and plum, but also sweet notes such as chocolate mousse with a boozy finish.
