Producer and Region
In the Santa Teresa region, Eulogia Carillo cultivates organic coffees at altitudes ranging from 1800 to 2000 metres above sea level. The distinct microclimates at this altitude significantly influence the unique character of the area’s coffees. Eulogia focuses on growing Catimor and Caturra varieties, with the harvest occurring in August.
For this specific lot, four families in the area have contributed with their cherries.
Processing
When the cherries are ripe, they pick the coffee with a small team by hand and then process it using the washed method. The coffee is dry fermented for about 20 hours before being washed, rinsed, and sun-dried on drying beds. Drying takes about 10-30 days on average.
Flavour
This is a very balanced and delicate cup, which is sweet and fruit-forward. We fell in love with its deep and ripe rosehip-like character, which makes this coffee comforting, yet complex.
