Producer and Region
The farm Finca La Villa de Don Juan is situated in the famous Huila region and stands out by the unique flavour profiles from its coffees. From the moment Juan inherited the farm from his father he has been dedicated to innovation and continuous learning, resulting in the remarkable farm he has today.
Processing
The cherries are selectively picked and then placed in plastic tanks to ferment. In this tank they added mosto, a cultivated juice from pulped coffee rich in natural yeasts, and Saccharomyces yeasts. Coffee ferments for 72 hours, then washed in clean water and then dried in 20 to 30 days.
Flavour
The result is a very unique, perfumed and candy-like flavour profile.
