We are always looking for coffees that reflect origin and terroir. But this time we made an exception. We really enjoyed this coffee on the cupping table an want to share this experience with you. In this coffee you will mostly taste processing instead of origin. Zira means brave and Empisa means method. And yes, the processing of this coffee is for the brave producer. It is a concept coffee, a semi-anaerobic fermentation method which is developed to add more fermentation without increasing the cost of the production. The cherries come from several small holders and always have to meet the criteria on quality and traceability.
First the cherries undergoes 12 hours of cherry fermentation in an anaerobic situation before it is dried like a natural on African dry beds. Anaerobic fermentation causes more intense sweetness and very recognizable profiles.
