We were blown away by this coffee because of its complexity, sweetness and delicacy. Estrella Divina is a project from the organisation Origin Coffee Lab. Currently working with 72 producers and together they focussing on quality and innovation. They are working on more controlled fermentation processing and monitor drying based on hours of sunlight.
This lot is made up of coffee from 27 small producers. All located in high altitudes close to the village Rumpite in La Coipa in the north of Peru. The producers in this area deliver extremely high quality with huge potential in the future. One of the reasons is the unique microclimate. Warm air from Rumipite comes up the mountainside and mix with cool, fresh air from the La Coipa mountain. This causes slow maturation of the cherries and that comes with more complexity and sweetness.
The producers from this project mainly grow the varieties Caturra, Pache and Bourbon and all have their own washing station where they depulp, ferment, wash and dry the coffee themselves.
