The farm, El Balsamo, is located in Lonya Grande one of the seven districts in the Utcubamba province of Peru. It is owned by Ciro Castro Ramirez. He cultivate specialty coffees in the higher altitudes of the district, which is surrounded by natural forests and natural spring water.
Currently Ciro has two hectares of coffee planted and is mainly growing Caturra and Bourbon. On his farm they still make use of a strict traditional processing protocol; selective harvest, pulping on the same day of harvest, average fermentation of 27-36 hours, washed with clean water and dried on pallets or solar tents.
Besides Ciro is a member of the Norcafe Cooperative. Their vision is “to be an organisation with values, providing opportunities for social-economic-environmental development in the communities.”
We selected this coffee because of its vibrant almost kenya-like acidity, juicy mouthfeel and long, layered and complex finish.
