This organic certified coffee comes from Jaen, a city located in the Cajamarca region, in the North-West of Peru. The region is very mountainous and the main economic resource is agriculture with rice, cocoa, corn, mango, avocado and of course coffee production. This coffee is a blend of Red Bourbon, Red Caturra and Typica and grown between 1200 – 1800 m. above sea level.
The decaffeination is done by the Canadian company Swiss Water. Raw, unroasted, green coffee is immersed in a natural solvent that we call Green Coffee Extract (GCE). GCE is a water-based solution containing all the same compounds naturally present in green coffee, except that is has no caffeine.
The GCE will extract caffeine from the green coffee. This process is repeated until the coffee is 99.9% caffeine free.
