In 2010 Jesus Salazar started a project of coffee cultivation involving the Mayan Communities. This project is named Cafeologo. He works with 35 micro-poducers who grow high quality coffee produced under the shade of the Mexican primary forest. Jesus is specialized in the processing of coffee and supports the farmers on the technical side of the process to create nanolots of high quality. Ten years later his project brings together a coffee shop, hotel, quality laboratory, cupping room, roastery, warehouse and a small factory.
Pedro Vazquez's production philosophy is focused on organic farming and continuous quality improvement. Pedro belongs to the Tzotzil ethnic group and according to Jesus from Cafeologo, he is the perfect model of committed coffee grower. He grows coffee on 4 hectares and they are then processed on the roof of the Cafeologia in San Cristobal de las Casas. Pedro is the first coffee grower in the region to innovate with natural processed coffees with such a level of quality.
This is one of those coffees we tasted and just had to order! This year only three bags of this coffee were available…. so it is a very exclusive coffee.
