Kenya Thimu AA (Washed)
This year we bought several small amounts of our favorite Kenyan coffees. They all match the classic profile you can expect from a Kenyan coffee, but all showing another aspect of the beauty of this origin. This third Kenya of the year stands out for its intriguing thyme-like herbal notes, which are backed up with tons of sweetness and tartness you can expect from a washed Kenya.
Intense and complex flavour profiles
Thimu factory is a washing station from the larger Baragwi Cooperative in Kirinyaga. The farmers under the Baragwi Cooperative in Kirinyaga are located on the slopes of Mount Kenya. This area is known for coffees with intense and complex, cup profiles. Baragwi helps farmers with weeding, pruning, spraying, the application of fertilizer and other technical advice.
Sun-dried on African dry-beds
All the participating smallholders sort out the unripe cherries by hand and deliver their best quality to the Thimu factory. Then the coffee is traditionally processed. It is pulped, dry fermented, washed and sun-dried in 12 to 20 days on African dry-beds.
We roasted this coffee fairly light and made sure all that sweet juiciness will make it into your cup!
Expect a super juicy and complex coffee with a very layered flavour profile. We found Black Currant, Thyme and Pomegranate with a lingering finish.
