This high-altitude coffee is produced in the La Libertad terroir, which is the highest municipality from the Huehuetenango region. The coffee grows at an average altitude of 1600 meters in the surroundings of high mountain peaks. It is a blend of two varieties harvested at optimum maturity: Red Bourbon and Caturra.
The coffee is produced by several farmers from the region. These farmers carefully pick only the ripe cherries, after which they are brought to a centralized washing station, Finca La Bolsa, where the processing takes place.
The coffee is cultivated on the characteristic limestone soil from the Huehuetenango region. The soil gives this coffee excellent bean quality, unique acidity and a chocolaty and spicy flavour profile.
We roast this coffee rather developed to enhance its chocolaty profile, but make sure a touch of that beautiful acidity remains.
