Acacia is named after Ethiopia’s national tree and is produced by smallholder farmers in the Sidamo region. The sweet, floral and fruity profile of this coffee is a classic representation of a true washed Ethiopia.
In this region, farmers pick coffee selectively and harvesting only the ripe cherries individually by hand. Then the coffee is depulped and washed by hand in cement canals at the community washing stations. After fermenting in water to loosen the mucilage, wooden paddles are used to fully wash the coffee. It is placed on raised beds to dry in the sun. After drying the coffee is screened by size and stored in good conditions in shared warehouses.
