Mauricio Salaverria is back with an outstanding coffee! The open-minded Mauricio is the master in excellent processing. This natural is the perfect example.
Mauricio owns 4 farms (Villa Galicia, Himalaya, Gruz Gorda, Divisadero) in the volcano chain on the Apaneca-Ilamatepec mountain. This is one of the most active Volcanoes in El Salvador. All of his farms are fortunate with impressive surroundings and super fertile volcanic-limestone soil.
Processing
Mauricio is calling this processing pineapple natural because of its pronounced tropical expression. First, he makes sure he uses only the best cherries. Then he expands the drying time by drying the coffees in the shade. This causes a drying period of 30 days instead of the traditional 10 to 15 days. They stir the cherries very regularly for even drying, and time does the rest!
In the roast, we’re focussing on that tropical sweetness and make sure you will experience a rich and creamy mouthfeel with tons of fruitiness.
