This coffee is from the farm named Himalaya which was planted in the years 1880-1890 by the Salaverria family. It is located in the Ilamatepec region, which is the largest coffee-producing region from El Salvador.
In this region you will find a chain of volcanoes called the Apaneca-Ilamatepec Mountain range. You will find a lot of craters such as Ataco, Apaneca, Juayua, etc. They are one of the most active volcanos in El Salvador.
Himalaya has an excellent terroir with clay and volcanic soils. They are known as the first specialty coffee farm in El Salvador and produced a lot of award winning "cup of excellence" coffees. Right now Mauricio is running the farm with a lot of passion and expertise for experimenting with processing and varieties.
This coffee has a very sweet and tropical flavour profile!
