Cruz Gorda is a 36 hectare farm located in Cerro Los Naranjos close to Santa Ana Volcano in the region of Ilamatepec. It is owned by Mauricio Salaveria and is part of the Divisadero project, which consist of coffees from five different farms.
This is the second year in a row we work with the coffee from the Divisadero project. Earlier this year we had coffee from the Himalaya farm and now we have this small plot from the Cruz Gorda farm where they grow 60% of Red Bourbon and 40% Pacas. Mauricio is a real microlot expert; he uses innovative processing methods and different variaties, however always respecting the environment and his workers.
Mauricio's coffees are known for their subtle, smooth and delicate flavours. In our roastery we roast this coffee lighter than other espressos to unlock both the chocolaty and the fruity profile and to enhance the beautiful softness and the round and pleasant body.
