This incredible farm, Las Terrazas del Pisque, is located on the peaceful slopes of the Andes mountain range at an altitude between 1700 and 2100 meters. In the middle of an aridand desert area Arnaud Causse created an ecosystem from A to Z. He planted a forest with more than 25 different tree species. The forest provides shelter to his coffee plants, the endemic trees beehives for the production of honey, and the plants are used to produce essential oils to treat coffee trees naturally, fruit trees have become a refuge for birdsand leguminous plants enrich the soil with nitrogen. This perfect agricultural environment allows Arnaud to grow his coffee without anypesticides. Arnaud loves to experiment with preparation processes and varieties. His background as an agricultural engineer and his international experiences in coffee growing make him a unique producer.
This particular coffee is fermented in an anaerobic situation. The cherries are placed in closed barrels in a cool place for 2 or 3 days for fermentation. Then, they are left to dry on African beds for 2 or 3 weeks and place in bulk in open crates for ventilation for 1 month.
