Villa Clabelina is owned by the brothers Hernan and Eugenio Prieto and was planted more than fifty years ago. Surrounded by the outstanding hills of Antioquia they have 105 000 coffee trees over 22 hectares, where they grow mainly the varieties Caturra and Colombia. The brothers are open minded and experiment with different processing methods. According to them coffee is an experience, a feeling.
The collection of the cherries is done by hand to make sure the selection of ripe cherries is perfect. All the stages of the drying process are done slowly and are managed with care and control.
This particular coffee undergoes a 48 hour anaerobic fermentation in water before drying. This process makes this coffee super sweet while remaining clarity. You can expect wild fruit, beautiful layers of berries and candy-like sweetness.
Anaerobic processed coffee needs some special treatment in our roasters. We keep this roast relatively short to make sure the coffee remains clean and the fruitiness is highlighted.
