This coffee is produced by the famous coffee producer Rodrigo Sanchez at his farm Monteblanco. Monteblanco is located in Pitalito in the Huila region of Colombia. Rodrigo is a fourth-generation and is widely recognized as the person who discovered the variety Pink Bourbon. He also won Colombia’s best coffee award for two straight years. In this competition he presented his signature Cold washed processing method.
Rodrigo’s main goal is to keep on innovating and try to make a difference by perfecting and developing extraordinary processing methods. Rodrigo is truly pushing the limits in coffee processing. This process is a very good example! After harvesting the perfectly ripe Purple Caturra variety, he added some additives to the fermentation tank. To start he made his own micro-organism extractions from lactobacillus and saccharomyces. Those microorganisms are mixed together with the ripe coffee fruit pulp and a fruit pulp mixture from pineapple, passionfruit, orange and mango. The high sugar content of the coffee and the fruit pulp works as the perfect energizer for the micro-organisms.
The result is a true fruit explosion! We chose to share this coffee to show you the possibilities of coffee processing. Some people might call this 'fake', but we believe this is just a great innovative approach. As long as the producer and the roaster openly communicate what happened with those kinds of coffees, it is just a great variation.
