Finally we found an amazing washed Colombia to present to you. In the heart of the Huila region this coffee is produced by the Macias family. The brothers Nelson and Ferney are continuing the family tradition of coffee production. They have a beautiful 33- hectare farm, which is green, fertile and located on an average altitude of 1800 meters.
In this region the coffee is picked in four moments. The second and the third pick is considered as the higher quality because of the good uniformity in perfectly ripe cherries. This coffee is fully washed, meaning pulped and dry fermented in the traditional way.
Because of the rain, drying is quite a challenge in this region. Therefore the family uses parabolic dryers which almost work like a greenhouse but with more ventilation.
This coffee is amazingly sweet, with dark fruits and a very special fizzy mouthfeel. We roast this coffee light but with a good amount of energy and enough development to push that fizzyness and sweetness!
