This coffee comes from a small group of producers from the famous Nariño region in Colombia. The name of this project is “Fruta Madura” and means ripe fruit in Spanish. It is a unique project set up by our green coffee importer Nordic Approach together with producers they have been working with for many years. They create coffee lots with extended cherry fermentation in order to get even more fruit characteristics out of the coffee.
This coffee is washed but undergoes extra fermentation in different stages of the process. After harvesting and carefully picking they ferment the cherry as a natural. Next the coffee is pulped and fermented for another one or two days. Lastly, the coffee is washed and dried for ten to eighteen days in parabolic dryers.
This process turned out great and makes the coffee is extremely sweet, full bodied and dense. We love the well-structured acidity and the intense red fruit and almost candy-like profile. We roasted this coffee light to highlight the vibrant acidity but developed enough to create a super sweet cup.
